December's New Oil

In Italy, where olive trees proliferate and olive oil is as much a part of the culture as wine, the olive harvest and the first pressing of olive oil is a time for celebration. The first oil is taken directly from the press and consumed with family and friends at a celebratory meal.

Albert and Kim Katz of Katz and Company have brought this tradition to their own olive harvest with their December's New Oil, Olio Nuovo. This estate grown and certified organic olive oil is the first oil pressed from the year's harvest and is meant to enjoy within the first four to six weeks after bottling.

We recently tried a bottle of this year's December's New Oil and we had to tell you about it. The olive oil has a fresh and intense flavor that brightens up almost any dish. We cut up a fresh loaf of bread and dipped it in the oil and later with our meal, we created a wonderfully simple salad dressing using the oil, Katz and Company Sauvignon Blanc Vinegar, shallots, salt and pepper.
